Loved reading through your notes - very timely as the Winter Solstice approaches. I might see of I can modify the scrumptious sounding sticky fig and ginger pudding for gluten-free grain-free eating!

Hi Cate, I have GF fig and ginger pudding, just replace the flour with the 'Well & Good' brand, it's so good and no need to change measurements. We also do the traditional 'stir up' with everyone in the family stirring the batter for good luck and then I add the lucky coin. Lots of fun as well as delicious!

I'll have to try that brand... I often just use a mix of almond and coconut flour to replace plain flour, but it changes the cooking times because of the density of the flour.

I remember doing the stirring and the placing of the silver sixpence in the pudding with my grandmother when I was young, but haven't done it myself. I should start. Such a beautiful bonding activity!
